Enjoy this easy baked chicken dish featuring a sweet and savory glaze. Brown sugar and soy sauce create a beautiful caramelization on your chicken as it cooks in the oven. This recipe captures a comforting, flavorful moment in our kitchen diary.

Ingredients

Scale
  • 2 lbs chicken pieces (thighs or breasts)
  • 1/4 cup soy sauce
  • 1/4 cup packed brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • Pinch of salt
  • Pinch of black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking dish.
  2. In a small bowl, whisk together the soy sauce, brown sugar, apple cider vinegar, Dijon mustard, garlic powder, and ginger. This is your glaze.
  3. Pat the chicken pieces dry with a paper towel. Season lightly with salt and pepper.
  4. Place the chicken pieces in the prepared baking dish.
  5. Pour half of the glaze mixture over the chicken, turning to coat well. Reserve the remaining half for basting later.
  6. Bake for 25 minutes.
  7. Remove the dish from the oven. Brush the chicken generously with the remaining glaze.
  8. Return the chicken to the oven and bake for another 10 to 15 minutes, or until the internal temperature reaches 165 degrees Fahrenheit and the glaze is deeply caramelized.
  9. Let the chicken rest for 5 minutes before serving.

Notes

  • This glaze works well with bone-in or boneless chicken parts.
  • If the glaze starts to darken too quickly, reduce the oven temperature slightly.
  • Richard remembers a similar flavor from a small eatery in Singapore.
