- 1 head green cabbage
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
- Remove any wilted outer leaves from the cabbage. Cut the cabbage into 8 equal wedges, keeping the core intact to hold the leaves together.
- In a small bowl, mix the olive oil, minced garlic, salt, and pepper.
- Brush the garlic oil mixture evenly over all sides of the cabbage wedges.
- Place the wedges cut-side down on the prepared baking sheet.
- Bake for 25 minutes.
- Remove the baking sheet from the oven. Sprinkle the grated Parmesan cheese evenly over the top of each wedge.
- Return the cabbage to the oven and bake for another 10 to 15 minutes, or until the cabbage is tender and the cheese is melted and lightly browned.
- Garnish with fresh parsley before serving.
Notes
- You can achieve a ‘melting’ texture by cooking longer at a slightly lower temperature, around 375 degrees Fahrenheit, for about 45 minutes total.
- For a richer flavor, substitute melted butter for olive oil in the garlic mixture.
- This recipe works well as a low carb side dish for weeknight meals.
