  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • ¾ cup extra virgin olive oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup fresh blood orange juice
  • Zest of 2 blood oranges
  • Optional: Powdered sugar for dusting

Instructions

  3. In a large bowl, whisk together the granulated sugar and olive oil until well combined.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the blood orange juice. Mix until just combined; do not overmix.
  6. Fold in the blood orange zest.
  7. Pour the batter into the prepared cake pan and spread evenly.
  8. Bake for 35-45 minutes, or until a wooden skewer inserted into the center comes out clean.

  10. Dust with powdered sugar before serving, if desired.
