Ingredients
Scale
1 (15-ounce) can black beans, rinsed and thoroughly dried
1 tablespoon olive oil
1/2 cup finely chopped onion
2 cloves garlic, minced
1/2 cup breadcrumbs (Panko recommended)
1/4 cup finely chopped walnuts or pecans (optional, for texture)
1 large egg (or 1 flax egg for vegan)
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (adjust for spice)
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
Preheat your oven to 350°F (175°C). Spread the rinsed black beans on a baking sheet lined with parchment paper. Bake for 10 minutes to dry them out slightly. This step is key to preventing mushy burgers.
While beans bake, heat olive oil in a skillet over medium heat. Sauté the onion until soft, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant. Remove from heat.
In a large bowl, lightly mash about two-thirds of the dried black beans with a fork or potato masher. Leave the remaining third whole for texture.
Add the sautéed onion and garlic mixture, breadcrumbs, nuts (if using), egg, chili powder, cumin, smoked paprika, cayenne, salt, and pepper to the mashed beans.
Mix everything gently until just combined. Do not overmix, or the patties will become dense. The mixture should hold its shape when pressed.
Form the mixture into 4 equal patties, about 3/4 inch thick. Place them on a clean plate or baking sheet.
Chill the patties in the refrigerator for at least 20 minutes. This helps them firm up before cooking.
To cook: For grilling or pan-frying, lightly brush the patties with oil. Cook over medium heat for 5 to 7 minutes per side until heated through and a crust forms. If grilling, use a solid grill surface or a grill mat.
Serve immediately on buns with your favorite toppings.
Notes
For a vegan version, substitute the egg with 1 tablespoon ground flaxseed mixed with 3 tablespoons water, allowed to sit for 5 minutes until gelatinous.
If you prefer a spicier burger, increase the cayenne pepper or add a teaspoon of hot sauce to the mixture.
These patties freeze well. Place parchment paper between cooked or uncooked patties and store in an airtight container for up to 3 months.
