Make simple, refreshing, dairy-free popsicles using ripe bananas and creamy coconut milk.

Ingredients

Scale
  • 3 ripe bananas
  • 1 can (13.5 oz) full-fat coconut milk, chilled overnight
  • 2 tablespoons maple syrup (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Scoop the thick cream layer from the top of the chilled coconut milk can; reserve the watery liquid for another use.
  2. Peel and roughly chop the bananas.
  3. Place the banana chunks, coconut cream, maple syrup (if using), and vanilla extract into a food processor or high-speed blender.
  4. Blend until the mixture is completely smooth and creamy. Scrape down the sides as needed.
  5. Pour the mixture into popsicle molds.
  6. Insert popsicle sticks.
  7. Freeze for at least 6 hours, or until solid.
  8. To release, briefly run the outside of the mold under warm water.

Notes

  • For a firmer texture, use light coconut milk instead of full-fat.
  • Add 1/4 cup shredded unsweetened coconut during the blending step for added texture.
  • If your bananas are very sweet, skip the maple syrup entirely.
