Enjoy these moist and flavorful Banana Blueberry Muffins. We use ripe bananas for natural sweetness and fresh blueberries for bright bursts of flavor. This recipe brings a warm, comforting taste right to your kitchen, perfect for starting your day.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 2 medium)
  • 1/2 cup milk
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Set this dry mixture aside.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy. You are creating the base for our tender muffins.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Add the mashed bananas to the wet mixture and mix until just combined.
  6. Alternate adding the dry ingredients and the milk to the banana mixture, beginning and ending with the dry ingredients. Mix only until *just* combined. Do not overmix the batter.
  7. Gently fold in the blueberries. If using frozen blueberries, do not thaw them first.
  8. Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
  9. Bake for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  10. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely. Share these memories with someone you love.

Notes

  • Ensure your bananas are very ripe; this provides the best sweetness and moisture.
  • For an even distribution, you can lightly toss the blueberries in a tablespoon of the reserved flour before folding them in.
  • Richard remembers the hint of spice in a similar treat we had abroad; cinnamon really brings out the flavor here.
