Ingredients
Scale
1 (8 ounce) block feta cheese
1 pint cherry or grape tomatoes
1/4 cup olive oil, plus more for drizzling
4 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes
Salt and freshly ground black pepper to taste
12 ounces pasta (like penne or rotini)
5 ounces fresh spinach
1/4 cup reserved pasta water
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
Place the block of feta cheese in the center of a small baking dish.
Scatter the cherry tomatoes around the feta cheese in the baking dish.
Drizzle the olive oil over the tomatoes and feta.
Sprinkle the minced garlic, dried oregano, and red pepper flakes over the tomatoes and feta. Season everything generously with salt and pepper.
Bake for 30 to 35 minutes, until the tomatoes have burst and the feta is soft and lightly golden.
While the cheese bakes, cook your pasta according to package directions until al dente. Reserve about 1/2 cup of the starchy pasta water before draining.
Remove the baking dish from the oven. Mash the baked feta and tomatoes together with a fork to create a creamy sauce. If the sauce seems too thick, add a splash of the reserved pasta water.
Add the drained, hot pasta directly to the baking dish. Toss everything together until the pasta is well coated in the sauce.
Add the fresh spinach to the dish. Continue tossing until the spinach wilts into the hot pasta mixture. Add more pasta water if needed for creaminess.
Serve immediately.
Notes
Baking temperature is 400 degrees Fahrenheit for best results.
You can use any small oven-safe dish that fits the feta and tomatoes snugly.
Taste the sauce before adding salt; feta is naturally salty.
Richard suggests a good quality olive oil makes a difference here.
