Ingredients

Scale
  • 4 Salmon fillets (about 6 oz each)
  • 1 tablespoon Olive oil
  • Salt and black pepper to taste
  • 1 tablespoon Butter
  • 3 cloves Garlic, minced
  • 1/2 cup Sun-dried tomatoes, chopped
  • 1 cup Heavy cream
  • 1/2 cup Chicken broth
  • 1/2 cup Parmesan cheese, grated
  • 2 cups Fresh spinach
  • 1 teaspoon Dried Italian seasoning
  • Juice of 1/2 Lemon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the salmon fillets dry. Rub them with olive oil and season generously with salt and pepper. Place the fillets in a baking dish.
  3. In a skillet over medium heat, melt the butter. Add the minced garlic and cook until fragrant, about one minute.
  4. Add the chopped sun-dried tomatoes to the skillet and cook for two minutes.
  5. Pour in the chicken broth and heavy cream. Bring the mixture to a gentle simmer.
  6. Stir in the grated Parmesan cheese and Italian seasoning. Continue stirring until the cheese melts and the sauce thickens slightly.
  7. Add the fresh spinach to the sauce, stirring until it wilts down completely. Remove the skillet from the heat and stir in the lemon juice.
  8. Pour about half of the cream sauce over the salmon fillets in the baking dish.
  9. Bake for 12 to 15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  10. Spoon the remaining sauce over the baked salmon before serving.

Notes

  • For extra flavor, you can sear the salmon skin-side down for 2 minutes before baking.
  • Use high-quality sun-dried tomatoes packed in oil for the best taste.
  • This pairs wonderfully with pasta or crusty bread to soak up the extra sauce.
