Ingredients
Scale
1 (8 ounce) wheel of brie cheese, cold
1 sheet frozen puff pastry, thawed
1 large egg, beaten (for egg wash)
1/4 cup fig jam
1/4 cup chopped pecans
1 tablespoon honey
Instructions
Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
If your puff pastry sheet is large, trim it slightly so it can fully enclose the brie wheel. Place the cold brie wheel in the center of the pastry.
Spoon the fig jam over the top of the brie wheel. Sprinkle the chopped pecans over the jam.
Bring the edges of the puff pastry up and over the brie, meeting in the center. Trim any excess pastry, leaving just enough to seal the edges completely. Pinch the seams firmly to seal the pastry around the cheese.
Place the wrapped brie, seam-side down, onto the prepared baking sheet.
Brush the entire surface of the pastry with the beaten egg wash. This helps it brown evenly.
Bake for 20 to 25 minutes, or until the pastry is puffed and golden brown.
Remove from the oven and let it cool on the baking sheet for 5 minutes before serving. Drizzle with honey just before you serve it.
Notes
For a savory option, replace the fig jam with a thin layer of pesto and top with fresh thyme instead of pecans.
If you want a crispier bottom crust, place a second piece of parchment paper under the pastry before baking.
Serve immediately with crackers, apple slices, or crusty bread for dipping.
