Ingredients
Scale
6 slices bacon, chopped
8 large eggs
1/4 cup milk
Salt and freshly ground black pepper to taste
8 small corn tortillas
1/2 cup shredded Monterey Jack cheese
1/4 cup chopped fresh cilantro
1/4 cup chopped white onion
Salsa, for serving
Avocado, sliced, for serving
Instructions
Cook the bacon in a skillet over medium heat until crisp. Remove bacon with a slotted spoon and set aside on paper towels. Reserve about 1 tablespoon of bacon grease in the skillet.
In a bowl, whisk together eggs, milk, salt, and pepper.
Pour the egg mixture into the skillet with the reserved bacon grease. Cook over medium-low heat, stirring gently, until the eggs are softly scrambled and cooked through.
Warm the corn tortillas according to package directions.
Fill each tortilla with scrambled eggs, chopped bacon, shredded cheese, cilantro, and onion.
Serve immediately with salsa and sliced avocado.
Notes
For extra flavor, you can add a pinch of cumin to the eggs.
If you prefer a spicier kick, add a diced jalapeño to the eggs while cooking.
Warm tortillas make them more pliable and prevent tearing.
