These Applesauce Pancakes bring moisture and a light, natural sweetness to your breakfast. Richard and Eleanor share this recipe, a simple way to make fluffy pancakes reminiscent of happy mornings.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 cup milk
  • 1/2 cup unsweetened applesauce
  • 2 tablespoons melted butter or oil
  • 1 teaspoon vanilla extract

Instructions

  1. Mix the flour, baking powder, baking soda, and salt in a large bowl.
  2. In a separate bowl, whisk together the egg, milk, applesauce, melted butter or oil, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients.
  4. Stir gently until just combined. Do not overmix; a few lumps are fine.
  5. Heat a lightly oiled griddle or non-stick pan over medium heat.
  6. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  7. Cook until bubbles appear on the surface and the edges look set, about 2 to 3 minutes.
  8. Flip the pancakes and cook for another 1 to 2 minutes until golden brown.
  9. Serve warm with your favorite toppings.

Notes

  • Applesauce replaces some of the fat, keeping these pancakes tender.
  • For extra flavor, add a pinch of cinnamon to the dry ingredients.
  • If the batter seems too thick, add a splash more milk.
