Ingredients
Scale
2 medium zucchini
1 large egg
1/4 cup all-purpose flour
1/2 cup panko breadcrumbs
1/4 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon black pepper
Cooking spray
Instructions
Wash and trim the ends of the zucchini. Cut them into fry shapes about 3-4 inches long and 1/2 inch thick.
Set up a dredging station with three shallow dishes. Place the flour in the first dish.
Whisk the egg well in the second dish.
In the third dish, combine the panko breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper. Mix these dry ingredients thoroughly.
Dredge each zucchini fry first in the flour, shaking off any excess.
Dip the floured fry into the egg mixture, letting the extra drip off.
Finally, press the fry firmly into the breadcrumb mixture, making sure the coating adheres well.
Lightly spray the bottom of your air fryer basket with cooking spray. Arrange the fries in a single layer, avoiding overcrowding.
Spray the tops of the fries lightly with cooking spray.
Air fry at 380°F (195°C) for 8 to 10 minutes, flipping halfway through, until golden brown and crisp.
Serve immediately and enjoy your crispy creation!
Notes
For an extra-crispy coating, let the coated fries rest in the refrigerator for 15 minutes before air frying.
If your zucchini seems very wet after cutting, pat it dry with paper towels before you start coating. This helps the flour stick better.
We love serving these with a simple homemade ranch dip.
