Make crispy, sticky sweet chili chicken right in your air fryer. This recipe delivers that perfect balance of sweet heat and a fantastic crunch, bringing back bright, bold flavors.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)
  • Sesame seeds, for garnish
  • Green onions, sliced, for garnish

Instructions

  1. Pat the chicken pieces completely dry with paper towels. This step helps you get crisp edges.
  2. In a bowl, toss the chicken with olive oil, salt, and pepper until coated.
  3. Place the chicken in a single layer in the air fryer basket. Do not overcrowd.
  4. Air fry at 380 degrees F for 8 minutes.
  5. While the chicken cooks, prepare the sauce. In a small saucepan, whisk together the sweet chili sauce, soy sauce, rice vinegar, ginger, and garlic. Bring the mixture to a simmer over medium heat.
  6. Whisk in the cornstarch slurry. Stir constantly until the sauce thickens slightly, about 1 minute. Remove from heat.
  7. After the initial 8 minutes, carefully toss the chicken pieces in the air fryer basket. Continue to cook for another 5 to 7 minutes, or until the internal temperature reaches 165 degrees F and the edges look nicely browned.
  8. Transfer the hot, crispy chicken to a clean bowl. Pour the prepared sweet chili sauce over the chicken. Toss quickly until every piece is coated in the sticky glaze.
  9. Serve immediately, garnished with sesame seeds and sliced green onions. Enjoy the crunch!

Notes

  • Drying the chicken well is the secret to getting those desirable crisp edges.
  • For an extra sticky coating, you can return the sauced chicken to the air fryer for 1-2 minutes at 400 degrees F after tossing it in the sauce. Watch closely to avoid burning.
  • If you like more heat, add a pinch of red pepper flakes to the sauce mixture.
