Ingredients
Scale
1 pound fresh green beans, trimmed
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 large egg, lightly beaten
1 cup ice-cold sparkling water
Cooking spray (oil-based)
Instructions
Wash and thoroughly dry the green beans. Pat them completely dry with paper towels; moisture prevents crispiness.
In a medium bowl, whisk together the flour, baking powder, salt, and pepper.
In a separate small bowl, lightly beat the egg. Add the beaten egg and the ice-cold sparkling water to the dry ingredients. Whisk briefly until just combined. Do not overmix; a few lumps are fine.
Preheat your air fryer to 380 degrees Fahrenheit (195 degrees Celsius) for 5 minutes.
Working in small batches, dip the green beans into the batter, allowing excess to drip off. You want a light coating.
Place the battered green beans in a single layer in the air fryer basket. Do not overlap them.
Lightly spray the top of the coated beans with cooking spray.
Air fry for 8 to 10 minutes, flipping halfway through, until the coating is golden brown and crispy.
Remove from the air fryer and immediately spray the second side lightly with cooking spray if you did not flip them immediately after the first spray.
Repeat with the remaining beans, ensuring you spray the basket lightly with oil between batches if needed.
Notes
For extra crispiness, chill the batter in the refrigerator for 15 minutes before using.
Serve immediately with a simple dipping sauce like soy sauce mixed with a little rice vinegar, or spicy mayonnaise.
Do not overcrowd the air fryer basket; cook in batches for the best texture.
