Make perfectly crispy breakfast potatoes in your air fryer using paprika for color and flavor. This method focuses on drying the potatoes for maximum crunch.

Ingredients

Scale
  • 1.5 lb Yukon Gold potatoes, diced into 1/2-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon sweet paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the diced potatoes in a bowl and cover them completely with cold water. Let them soak for at least 30 minutes. This removes excess starch.
  2. Drain the potatoes completely. Spread them out on a clean kitchen towel or paper towels and pat them very dry. Moisture prevents crisping.
  3. In the same bowl, toss the dry potatoes with olive oil until lightly coated.
  4. In a small bowl, mix together the smoked paprika, sweet paprika, garlic powder, onion powder, salt, and pepper.
  5. Sprinkle the seasoning mix over the oiled potatoes and toss until evenly coated.
  6. Preheat your air fryer to 400°F (200°C) for 5 minutes.
  7. Place the seasoned potatoes in the air fryer basket in a single layer, working in batches if necessary. Do not overcrowd the basket.
  8. Air fry for 15 minutes. Shake the basket vigorously.
  9. Continue to air fry for another 5 to 10 minutes, shaking every 3 minutes, until the potatoes are deep golden brown and very crispy.
  10. Serve immediately as a breakfast side dish.

Notes

  • For extra crispiness, you can lightly spray the potatoes with cooking spray just before the final 5 minutes of cooking.
  • If you prefer a spicier kick, add a pinch of cayenne pepper to your seasoning blend.
  • Ensure your potatoes are completely dry after soaking; this is the most important step for achieving a crunchy exterior.
