Enjoy bakery-style blueberry hand pies made easily in your air fryer. This recipe focuses on getting a flaky crust and perfect sealing for a handheld dessert that tastes like a cherished memory.

Ingredients

Scale
  • 1 package (14.1 ounces) refrigerated pie crusts (2 crusts total)
  • 1 tablespoon all-purpose flour (for dusting)
  • 1 cup fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1 large egg (for egg wash)
  • 1 teaspoon water (for egg wash)
  • 1 tablespoon coarse sugar (for topping)

Instructions

  1. In a medium bowl, gently mix the blueberries, granulated sugar, cornstarch, lemon juice, and cinnamon. Set the filling aside.
  2. Lightly dust your work surface with flour. Unroll both pie crusts onto the surface.
  3. Using a 4-inch round cutter or a bowl, cut circles from the pie dough. You should get about 6-8 circles per crust, depending on the size.
  4. Place about 1 tablespoon of the blueberry filling onto the center of one dough circle. Do not overfill.
  5. Lightly brush the edges of the dough circle with the egg wash (whisk the egg and water together).
  6. Fold the dough over the filling to create a half-moon shape. Press the edges firmly together with your fingers to seal.
  7. For a secure seal, crimp the edges using the tines of a fork. This is important to keep the filling inside during air frying.
  8. Place the sealed hand pies onto a baking sheet lined with parchment paper.
  9. Lightly brush the top of each hand pie with the remaining egg wash. Sprinkle generously with coarse sugar.
  10. Preheat your air fryer to 350°F (175°C).
  11. Carefully transfer the hand pies to the air fryer basket in a single layer. Work in batches if necessary; do not overcrowd the basket.
  12. Air fry for 10 to 12 minutes, or until the crust is golden brown and flaky.
  13. Remove carefully and let the hand pies cool on a wire rack before serving.

Notes

  • If using frozen blueberries, do not thaw them before mixing with the filling ingredients.
  • Make sure the edges are completely sealed. If the egg wash is too thin, the pies might separate.
  • Adjust air fryer time based on your specific model; check them starting at 9 minutes.
