Ingredients
Scale
3 large eggs, separated
1/4 teaspoon cream of tartar
2 tablespoons sweetener (e.g., erythritol, xylitol, or stevia to taste)
Instructions
Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
In a clean, dry bowl, beat the egg whites with the cream of tartar until stiff peaks form.
In a separate bowl, lightly beat the egg yolks. Add the sweetener to the egg yolks and mix well.
Gently fold the egg yolk mixture into the beaten egg whites until just combined. Be careful not to overmix, as this will deflate the egg whites.
Spoon mounds of the mixture onto the prepared baking sheet, shaping them into bread-like forms.
Bake for 20-25 minutes, or until the cloud bread is lightly golden and firm to the touch.
Let cool completely on a wire rack before serving.
Notes
Ensure your egg whites are completely free of any yolk for best results.
You can add a pinch of salt or a dash of vanilla extract for extra flavor.
Store leftover cloud bread in an airtight container at room temperature for up to 2 days.
