Make this restaurant-quality Shrimp Scampi in just 15 minutes. Plump shrimp sauté quickly in garlic, butter, and lemon, then toss with pasta for a fast, flavorful weeknight meal.

Ingredients

Scale
  • 1 pound linguine or spaghetti
  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup dry white wine (like Pinot Grigio or Sauvignon Blanc)
  • 1/4 cup fresh lemon juice
  • 1/4 cup chopped fresh parsley
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Cook pasta according to package directions until al dente. Reserve about 1/2 cup of the starchy pasta water before draining.
  2. While the pasta cooks, melt butter in a large skillet over medium heat.
  3. Add minced garlic and red pepper flakes (if using) to the skillet. Cook for about 1 minute until fragrant. Do not let the garlic burn.
  4. Add the shrimp to the skillet in a single layer. Season with salt and pepper. Cook for 1-2 minutes per side until the shrimp turns pink and opaque.
  5. Pour in the white wine and lemon juice. Let it simmer for 1 minute, scraping up any bits from the bottom of the pan.
  6. Add the drained pasta directly to the skillet with the shrimp.
  7. Toss everything together, adding the reserved pasta water a little at a time until a light sauce coats the pasta.
  8. Stir in the fresh parsley. Taste and adjust seasoning if needed.
  9. Serve immediately.

Notes

  • This recipe captures the simple perfection of pasta we enjoyed in Florence.
  • Richard always checks that the shrimp are perfectly pink before adding the wine.
  • If you do not wish to use wine, substitute chicken broth for the wine.
